Ingredients:

For the Cauliflower Crust:

  • 1 medium cauliflower, grated into rice-sized pieces
  • 1 egg, beaten
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

For the Toppings:

  • 1/4 cup pesto sauce (store-bought or homemade)
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup bell peppers, thinly sliced
  • Fresh spinach leaves
  • Fresh basil leaves (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    • Grate the cauliflower florets using a box grater or food processor until it resembles rice-sized grains.
    • Place the cauliflower rice in a microwave-safe bowl and microwave for 5-7 minutes until soft. Let it cool slightly, then squeeze out any excess moisture using a kitchen towel or cheesecloth.
    • In a mixing bowl, combine the cauliflower, beaten egg, mozzarella cheese, Parmesan cheese, oregano, salt, and pepper. Mix until fully combined.
    • Spread the cauliflower mixture into a round or square shape on the parchment paper, creating a thin crust. Bake for 20-25 minutes until golden and crisp on the edges.

    • Spread a generous layer of pesto sauce over the baked cauliflower crust.
    • Top with shredded mozzarella, cherry tomatoes, bell peppers, and spinach leaves.
    • Drizzle a little olive oil over the toppings.
